Comparable in quality to the swanky retail brands with 35% cooked must from Trebbiano and Sangiovese grapes near Modena in Emilia-Romagna. Once grapes are pressed to yield juice for wine, the remaining must (skins, seeds, sweet fruit flesh) is boiled down and strained to 1/3 its original volume, then some of last season’s vinegar is added to begin the acidification process. Careful ageing develops the sweet and savory flavors which are used in Italy as seasoning, in America as salad dressing or drizzled over vegetables to boost flavor. Insalata Caprese anyone?
